Ingredients

  • ½ cup coconut flour
  • 4 eggs
  • ½ cup coconut oil
  • ½ cup coconut milk
  • ½ cup blueberries
  • ½ cup sweetener
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350 F
  2. In a bowl combine all ingredients except blueberries
  3. Lin a muffin pan with paper cups, add blueberries and fill each cup
  4. Place remaining blueberries on top of the muffins
  5. Bake for 20-22 minutes or until golden brown
  6. When ready remove and serve
