Ingredients

  • 8 eggs
  • 2 tablespoons onion
  • ½ cup spinach
  • 6 cherry tomatoes
  • TOPPINGS
  • ½ cup mozzarella cheese
  • 1/3 cup bacon
  • 1/3 cup cheddar cheese

Instructions

  1. Preheat the oven to 325 F
  2. In a bowl combine all ingredients together
  3. Divide the batter between 6 muffin tins and top with bacon, mozzarella cheese and cheddar cheese
  4. Bake for 18-20 minutes, when ready remove and serve
