KETO MUFFINS WITH HAM

Ingredients

  • 8 slices ham
  • ¼ cup roasted red pepper
  • ½ cup spinach
  • ½ cup feta cheese
  • 4 eggs
  • pinch of pepper
  • pinch of salt
  • 1 tablespoon pesto sauce
  • basil

Instructions

  1. Preheat the oven to 375 F
  2. Line each muffin tin with ham and place roasted red pepper in each one
  3. Add minced spinach and top with pepper and feta cheese
  4. In a bowl combine salt, pepper and the eggs
  5. Divide mixture between 4-6 muffin tins
  6. Bake for 15-18 minutes
  7. When ready remove and serve
