Ingredients

  • 1 tablespoon olive oil
  • ¼ onion
  • 2 garlic cloves
  • 1 sweet pepper
  • 1 handful baby spinach
  • ½ cup parsley
  • 6 eggs
  • ½ cup coconut milk
  • 8 slices prosciutto

Instructions

  1. Preheat the oven to 325 F
  2. In a blender add all ingredients, except prosciutto and blend until smooth
  3. Grease a muffin tin with olive oil and line each one with a slice of prosciutto
  4. Pour the batter into each muffin tin and bake for 18- 20 minutes
  5. When ready remove and serve
